Until we 'discovered' Domaine Collet a few years ago, we were beginning to despair of finding a classic, flinty Chablis at a reasonable price.  Collet is one of the most established domaines in the town, but the quality of the wines has improved drastically since Romain Collet took over.  His wines are the epitome of the Kimmeridgian limestone-terroir that rightly made this area so famous.
